Roasted Garlic Mashed Potatoes

Ingredients:

  1. 2 pounds of potatoes, peeled and diced
  2. 1 head of garlic, roasted
  3. 1/4 cup of milk
  4. 4 tablespoons of butter
  5. Salt and pepper to taste

 

Instructions:

Preheat your oven to 400°F.

Cut off the top of the garlic head to expose the cloves, drizzle with olive oil, and wrap in foil. Roast in the oven for 30-40 minutes until soft.

Boil the diced potatoes in a pot of salted water until tender.

Drain the water and mash the potatoes.

Squeeze the roasted garlic cloves out of their skins and add to the mashed potatoes along with the milk and butter.

Mix well and season with salt and pepper to taste.
